The parts in parentheses are what I’ve added to make sense of this handwritten recipe from my mother-in-law.

Servings: 1 pie

Servings: 1 pie
Ingredients
  • 1 pt. milk
  • ½ c. flour
  • 1 c. brown sugar
  • 2 tbsp. unsalted butter
  • 2 eggs
  • ½ tsp. vanilla
  • 1 baked pie crust (cooled)
Steps
  1. Mix milk & flour in top of double-boiler. Cook (stirring constantly) for 15-mins. (Remove from heat.)
  2. Put brown sugar & butter in separate saucepan. Cook (stirring constantly) 5-mins; then stir into milk mixture.
  3. (Separate eggs) & beat egg yolk.
  4. Stir hot brown sugar mixture into eggs (being very careful not to cook eggs).
  5. Stir in vanilla & pour into pie crust.
  6. (Chill.)
Notes
  • One can still make dishes with uncooked eggs as long as your careful of the source. If not directly from the farm, try to use organic/free rage & something like Eggland.
  • The original recipe doesn’t say to separate the eggs, but it only talks about using egg yolks, so I would.
