- 2 pounds currants
- 1 ½ pounds dates
- 1 pound whole, or half, walnuts (or pecans or blanched almonds if you wish)
- 1 pound mixed peel
- 1 pound glazed cherries
- ¼ pound glazed pineapple
- ¼ cup flour (this is to coat the fruit; you will need more flour later)
- 1 pound butter, softened to room temperature
- 2 cups white sugar
- 8 eggs, beaten
- 2 ¾ cups all-purpose flour
- ¾ tablespoon cloves
- ¾ tablespoon nutmeg
- ¾ tablespoon cinnamon
- ½ teaspoon baking soda
- ½ lemon, juiced and peel grated
- ½ cup pineapple juice
