  • 1 medium onion, finely diced about 1 ½ cups (286 grams)
  • 1 carrot, peeled, finely diced
  • 1 celery stalk, finely diced
  • ¾ pound plant-based ground beef (like Impossible Meat or Beyond Beef)
  • 3 garlic cloves, finely chopped (about 3 teaspoons)
  • 2 tablespoons tomato paste
  • ½ cup red wine
  • 3 cups tomato or marinara sauce (use 3 ½ cups/906 g if you like it saucier)
  • ½ cup water
  • subheading: seasonings:
  • 1 tablespoon dried oregano
  • 1 teaspoon chili powder, or more
  • ½ teaspoon sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper or more
  • 1 bay leaf (or 2)
  • optional: 1 tsp prepared mustard, pinch of red chili flakes
