Lemon Orzo with Asparagus/Green Beans

Ingredients
- subheading: For the dressing:
- 1 lemon zested
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- salt and pepper to taste
- 2 tbsp olive oil
- subheading: For the orzo:
- 8 oz. asparagus or green beans
- 2 cups water
- 1 tbsp Better than Bouillon base (either no chicken or veggie)
- ⅛ tsp turmeric
- ¾ cup dry orzo pasta
- salt & pepper to taste
Steps
- subheading: Dressing:
- Whisk all dressing ingredients. Set aside.
- subheading: Orzo:
- Prep asparagus or green beans. Boil in salted water for 5 minutes. Cool in ice water.
- Place the water and Better than Bouillon in a pot and bring to a boil. Add salt and turmeric, orzo and cook for 10 minutes. Drain, but don't rinse and add to a large bowl. Add the asparagus/green beans, add the dressing and serve once warm.
- Top with a pat of plant-based butter if preferred.
