Spicy Almond Butter Noodles
Ingredients
  • ¼ cup 2 tbsp peanuts
  • 1 garlic clove, peeled
  • 1 lime, half juiced, half cut into wedges (divided)
  • 2 tbsp almond butter
  • 2 tbsp tamari
  • 1 tsp turbinado sugar
  • 1 tbsp chile garlic sauce
  • 10 oz fresh ramen noodles (soba, somen or udon)
  • 6 oz baby bok choy, chopped
  • 1 red bell pepper, trimmed and de-seeded
  • 2 scallions, trimmed and thinly sliced
  • 2 tsp vegetable oil*
  • Salt*
