Crunchy Veggie Wraps
Ingredients

  • 4 oz. chive or vegetable cream cheese or light Laughing Cow garlic and herb spreadable cheese
  • 8 whole wheat tortillas (use wheat/gluten-free if needed)
  • 2 cups shredded (matchstick cut) carrots, (about 2 carrots)
  • 1 avocado, peeled and sliced
  • 1 to 2 cucumber, peeled and cut into thin strips
  • ¼ cup Caesar salad dressing, store-bought or use recipe below

  • Ingredients for side dish - Apple, Cabbage and Gorgonzola Slaw
  • ¼ cup apple cider vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. honey
  • ¼ to ½ head green cabbage, thinly sliced (6 cups total)
  • 1 apple, finely chopped (no need to peel)
  • ¼ cup dried cranberries, naturally sweetened
  • ½ cup pecans, coarsely chopped
  • 1 cup crumbled Gorgonzola cheese
