Ingredients
  • 2 c. rice
  • 1 tbsp. olive oil
  • 1 clove garlic (diced)
  • 3 tomatoes (chopped)
  • ½ onion (chopped)
  • 4 c. vegetable broth
  • 1 c. peas
  • 2 carrots (chopped)
  • 1 chili pepper (chopped)
  • salt to taste
Steps
  1. Pour oil into large skillet, turn heat on low, & add rice.
  2. Stirring, toast rice till golden.
  3. Stir garlic, tomatoes, & onion into rice & cook till mixture is soft.
  4. Stir in remaining ingredients.
  5. When mixture starts to boil, reduce heat, cover, & simmer till rice is fully cooked.
