Cobb Salad with Blue Cheese Dressing

  • 8 cups romaine or iceberg lettuce, chopped
  • 1 ½ cups grape or cherry tomatoes (225g), halved
  • 1 cup corn kernels,, (thawed if frozen)
  • 1 avocado,, chopped
  • subheading: Blue Cheese Dressing:
  • 300 g soft or silken tofu (1 cup)
  • 2 tablespoons nutritional yeast
  • 1 ½ tablespoon apple cider vinegar
  • 1 tablespoon white miso paste
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried dill
  • ¼ cup medium or firm tofu, crumbled (optional for texture)
