Instant Pot/Slow Cooker Mexican Stuffed Peppers
Ingredients
  • 1 ½ cups water (Instant Pot version only)
  • 4 large green peppers or 5 medium green peppers
  • ½ cup uncooked instant brown rice
  • 2 cups picante sauce (I used mild)
  • ½ tsp salt
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 (14 oz) can black beans, rinsed and drained
  • Optional: 1 cup cooked and chopped chicken or 1 cup cooked ground beef or turkey
  • Grated cheddar and sour cream, for topping
