Turkey and cranberry mini quiche
Leftover cooked turkey and cranberry sauce

Ingredients
  • 200g leftover turkey
  • ½ Onion
  • 1tbs butter or oil
  • 50 to 75 g Cranberry sauce
  • 125g cheese /mozzarella
  • 4 eggs
  • 1 portion of BCB quick puff pastry
Steps
  1. Heat Oven to 180°
  2. Oil 2 muffin trays or fill with silicon cupcake cases (24)
  3. Blitz cheese and set aside 10sec/sp5
  4. Blitz turkey and set aside 10sec/sp5
  5. Blitz onion 5sec/sp5, add oil 3min/sp2/MC off.
  6. Add cranberry, cheese, turkey & eggs, combine 20sec/sp5/reverse
  7. Divide and roll the pastry into muffin tin
  8. Fill each with a tablespoon of mixture
  9. Bake for 15 to 20mins until golden brown
Notes
  • No need to wash bowl for onions.
