Vegan Ginger Cake with Roasted Rhubarb
Ingredients

  • ½ tablespoon apple cider vinegar
  • 75 g vegan butter
  • 100 g granulated sugar
  • ½ teaspoon vanilla bean paste
  • 150 g plain white flour
  • 2 teaspoon ground ginger
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • subheading: For the Roasted Rhubarb:
  • 600 g rhubarb ((washed, halved lengthways and chopped into inch long pieces))
  • 165 g granulated sugar
  • 1 teaspoon vanilla bean paste
  • zest and juice of ½ an orange
