Curried Tofu Scramble
This tofu scramble is an easy to make, gluten-free breakfast that's high-protein, super filling, and it's loaded with vegetables! This dish is great for breakfast any day of the week or for Sunday brunch!
Ingredients
  • 1 block firm or extra firm tofu pressed and drained
  • 3 to 4 tbsp vegetable broth (used to saute)
  • 1 small onion diced
  • 1 large red pepper diced
  • 8 oz mushrooms sliced
  • ½ tsp turmeric powder
  • ½ tsp curry powder
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp coriander
  • ¼ tsp paprika
  • ¼ tsp garam masala
  • 2 to 3 cups fresh spinach
  • ¼ tsp black salt (add more to taste)
  • ¼ tsp black pepper
  • ¼ cup green onions sliced
