Copycat Olive Garden Minestrone Soup by Todd Wilbur
Ingredients
  • 3 tbsp olive oil
  • 1 cup white onion , minced (about 1 small onion)
  • 1⁄2 cup zucchini , chopped
  • 1⁄2 cup frozen Italian cut green beans
  • 1⁄4 cup celery , minced (about ½ stalk)
  • 4 tsp garlic , minced (about 4 cloves)
  • 4 cup vegetable broth , (Swanson is good *note ( Do not use chicken broth!*)
  • 15 oz cans red kidney beans , drained
  • 15 oz cans small white beans or great northern beans , drained
  • 14 oz can diced tomatoes
  • 1⁄2 cup carrot , (julienned or shredded)
  • 2 tbsp fresh parsley , minced
  • 1 1⁄2 tsp dried oregano
  • 1 1⁄2 tsp salt
  • 1⁄2 tsp black pepper , ground
  • 1⁄2 tsp dried basil
  • 1⁄4 tsp dried thyme
  • 3 cup hot water
  • 4 cup fresh baby spinach
  • 1⁄2 cup small seashell pasta
