Mini Bundt Cake

Ingredients
  • 2 eggs
  • ½ cup milk sub
  • 3 tbsp sweetener
  • 1 tsp vanilla
  • 6 tbsp coconut flour
  • 1 tsp baking powder
  • subheading: Lemon Drizzle (optional):
  • ¾ cup powdered sweetener
  • 1 tbsp lemon juice
Steps
  1. Whisk together the milk and eggs.
  2. Add the sweetener and vanilla.
  3. Add the coconut flour and baking powder.
  4. Let rest 5 minutes and cook in the Dash Mini Bundt Maker for 8 minutes.
  5. This recipe makes 3 cakes.
  6. Mix powdered sweetener and lemon juice together adding more lemon or more sugar depending on how thick you'd like it.
  7. Pour frosting over cakes and enjoy!
