Baked Egg Tortilla (Tortilla Quiche)

I love the Low Carb lifestyle but I have a big family so not all my recipes are low carb. Some of my recipes are changed to fit my taste. I also love DIY home goods.

1 Flour tortilla - large

4 Eggs - whisked

½ cottage cheese

30 g ( 1 cups) Spinach - chopped

6 Cherry tomatoes - halved

8 Olives - halved

2 Spring onions (Scallions) - sliced

0.25 Red bell pepper - diced

40 g ( 0.33 cups) Cheddar cheese - mature; grated

20 g ( 0.25 cups) Feta - crumbled

Chives - to serve
