Ingredients
  • 2 cans of black beans, drained and rinsed

  • 1 tsp paprika
  • juice of ½ lime
  • 2 Tbsp cilantro, chopped
  • 4 to 6 ounces pepper jack cheese, grated
  • 3 Tbsp olive oil
  • Pinch of salt and pepper
  • 8 corn tortillas
  • salsa, guacamole, sour cream and/or lime wedges for serving
