Middle Eastern Lamb Shoulder
Ingredients
  • 4 garlic cloves, chopped
  • 1 handful of mint leaves, chopped, plus extra leaves to serve
  • 1 handful of coriander leaves, chopped
  • 3 tablespoons orange juice
  • zest and juice of 1 lemon
  • ½ teaspoon orange zest
  • 3 tablespoons melted coconut oil or good-quality animal fat, plus extra for greasing
  • sea salt and freshly ground black pepper
  • 2 onions, sliced
  • 1 x 1.5 kg lamb shoulder, bone in
  • 500 ml (2 cups) Chicken Bone Broth or lamb bone broth
  • 1 handful of flat-leaf parsley leaves, to serve
  • Middle Eastern spice mix
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon sumac
  • ½ teaspoon ground allspice
  • ½ teaspoon chilli flakes
  • ½ teaspoon ground cinnamon
