Apricot Glazed Pork Tenderloin

  • ¼ cup apple cider vinegar
  • ¼ cup less sodium soy sauce, tamari for gluten free
  • 2 teaspoons honey
  • 2 teaspoons minced fresh garlic
  • 2 tablespoons canola oil
  • 2 to 2.25 pounds pork tenderloin, trimmed (2 tenderloins)
  • ½ teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh rosemary leaves, or 1 ½ teaspoons dried
  • 2 teaspoons water
  • 2 teaspoons cornstarch
