Best Green Goddess Dressing. Basil predominant
Ingredients
  • 2 heads cos lettuce, roughly chopped
  • 1 Lebanese cucumber, cut into 5mm half moons
  • 200g cherry tomatoes, halved
  • 250g store-bought cooked chicken breast, roughly chopped (see note)
  • 4 slices wholemeal bread, toasted and chopped or torn into small pieces
  • subheading: Super-fast green goddess dressing:
  • 1 small eschalot (French shallot)
  • 40g (¼ cup) raw cashews
  • 20g (1 cup) baby spinach leaves
  • 1 bunch of basil, leaves picked
  • 1 garlic clove, minced
  • juice of 2 lemons
  • 1 tbsp extra-virgin olive oil
  • 30g (⅓ cup) grated parmesan
  • 1 tsp sea salt flakes
  • ¼ tsp freshly ground black pepper
  • 1 to 4 tbsp water
