Carrot Cake Pancakes (Gluten Free & Dairy Free!)
Ingredients
  • ½ cup unsweetened applesauce
  • 2 eggs
  • ⅓ cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure maple syrup (or sub coconut sugar or honey)
  • 1 ½ cups old fashioned rolled oats, gluten free if desired
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

  • 1 cup shredded carrots (shred with a cheese grater)
  • ¼ cup chopped walnuts or pecans
  • 3 tablespoons raisins
