Mexican Street Corn Potato Salad
Ingredients
  • 1 lb small new potatoes, skin on
  • ¼ cup mayonnaise (I used a heaped ¼ cup)
  • 2 to 4 Tbsp lime juice, divided
  • ½ tsp chipotle chile pepper powder
  • salt and fresh ground black pepper to taste
  • ½ cup sliced black olives
  • 2 ears cooked or grilled corn, kernels removed
  • ¼ cup minced red onion
  • 1 jalapeño or Serrano pepper, minced
  • ½ small head of iceberg lettuce, thinly shredded
  • fresh cilantro leaves
  • cojita cheese, crumbled
  • 1 lime cut in wedges
  • ¼ cup sour cream (or Mexican Crema)
