  • 1 tablespoon soy sauce
  • 2 teaspoons dark soy sauce*
  • ½ teaspoon Vietnamese or Thai fish sauce
  • 1 cup thinly sliced red onion
  • 3 green onions, ends trimmed, onions cut into 1-in. lengths
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon unsalted butter
  • 1 bunch watercress, tough stems removed
