Bacon Egg & Cheese Biscuit Casserole

Ingredients
  • 8 large eggs
  • 3 T milk
  • ½ t salt
  • 1 t pepper
  • 4 to 5 pillsbury grands biscuits (buttermilk)
  • ½ package of bacon, cooked crisp
  • ¼ cup of chopped onion
  • ¼ cup of chopped green pepper
  • 1 cup of cubed or shredded cheese (I used velveeta)
Steps
  1. Heat oven to 375° and spray medium size casserole dish with cooking spray. Whisk eggs, milk, salt, and pepper together. Cut each biscuit into 4 to 6 pieces and add to egg mixture, then pour into the casserole dish. Sprinkle bacon,onion, and green pepper over the mixture and add ½ cup cheese and stir slightly. Cover and bake for about 30 minutes.  After 30 minutes, uncover and sprinkle the rest of the cheese over the top. Cook uncovered for 5 to 10 minutes until cheese is melted.

  • I made sausage gravy to put over it
