  • ¼ cup (60ml) Schmaltz (rendered chicken fat) or neutral oil like vegetable or canola oil (see notes)
  • 1 cup matzo meal (4 ounces; 113g)
  • ⅛ to 1 teaspoon baking powder (optional; see notes)
  • 2 ½ teaspoons Diamond Crystal kosher salt, divided; for table salt, use half as much by volume
  • ¼ teaspoon freshly ground black pepper
  • 3 quarts (2.8L)  good-quality homemade chicken stock, divided
  • ½ cup finely diced carrot (7 ounces; 198g), from 1 large carrot
  • ½ cup finely diced celery (2 ¾ ounces; 78g), from 1 large celery rib
  • 2 fresh dill sprigs, plus picked fresh dill fronds for garnish
