Easy Chicken and Rice
Ingredients
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 ½ lb. boneless skinless chicken breast cut into bite-size pieces
  • ⅕ teaspoon paprika
  • ¼ teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • 1 medium yellow onion chopped
  • 2 ribs celery chopped
  • 3 large carrots peeled and chopped
  • 2 cloves garlic minced
  • ½ teaspoon dried thyme
  • ½ teaspoon crushed rosemary
  • ½ teaspoon marjoram
  • 2 cups jasmine or basmati rice (uncooked)
  • 4 ½ cups chicken broth
  • Kosher salt and fresh ground black pepper to taste
