Roast Chicken with Five Spice Gravy
Ingredients
  • 1 x 1.6kg (3 lb 8 oz) whole chicken
  • sea salt
  • ½ cup whole egg mayonnaise
  • 1 bunch rosemary
  • 2 brown onions, skin on, cut into thick, 2.5cm (1 inch) slices
  • subheading: Five spice gravy:
  • 120g (4 oz) unsalted butter
  • 1 tsp Chinese five spice (use store-bought or try my homemade version )
  • ½ cup plain (all-purpose) flour
  • 3 cups chicken stock (use store-bought or try my homemade version )
  • 1 tbsp soy sauce, plus extra to taste if needed
