Ingredients
- ⅓ cup cottage cheese
- 1 eggs
- 1 tbsp flour
- ⅔ cup cheddar cheese
- 3 oz leaf spinach (frozen or fresh)
- salt & pepper to taste
Steps
- Preheat oven to 350
- Thaw spinach and let drain. You can gently squeeze out extra water for a firmer end product
- Mix spinach, cottage cheese, eggs, flour, salt & pepper and half of cheddar cheese and stir.
- Pour into greased casserole dish.
- Put the rest of cheese on top
- Bake 1 hour and 15 minutes at 350 degrees.
Notes
- *1 tbsp of flour is 6 carbs. Divided into 4 servings, this will add less 2 carbs.
- You could lessen it or omit it completely, end result would be less firm.
- You could sub it out with ¼ to ½ tsp of xanthan gum or a small amount of coconut flour as well.
