Grandma's Spinach Souffle (Small)

Ingredients
  • ⅓ cup cottage cheese
  • 1 eggs
  • 1 tbsp flour
  • ⅔ cup cheddar cheese
  • 3 oz leaf spinach (frozen or fresh)
  • salt & pepper to taste
Steps
  1. Preheat oven to 350
  2. Thaw spinach and let drain. You can gently squeeze out extra water for a firmer end product
  3. Mix spinach, cottage cheese, eggs, flour, salt & pepper and half of cheddar cheese and stir.
  4. Pour into greased casserole dish.
  5. Put the rest of cheese on top
  6. Bake 1 hour and 15 minutes at 350 degrees.
Notes
  • *1 tbsp of flour is 6 carbs. Divided into 4 servings, this will add less 2 carbs.
  • You could lessen it or omit it completely, end result would be less firm.
  • You could sub it out with ¼ to ½ tsp of xanthan gum or a small amount of coconut flour as well.
