Tofu & vegetable udon noodles
Ingredients
  • 200g udon noodles, cooked according to packet instructions
  • 1 tsp canola oil (optional)
  • 120g/4.23oz firm tofu, cubed
  • ¼ of a brown onion
  • ¼ tsp grated ginger
  • ½ clove crushed garlic
  • ½ cup broccoli, cut into small florets
  • ¼ cup red capsicum, sliced
  • ½ cup of bok choy
  • subheading: Sauce:
  • 1 tsp soy sauce/tamari (use Tamari for GF option)
  • ½ Tbsp sweet chilli sauce (check ingredients for GF option)
