Ingredients
- I love Samoa cookies and there have been some fun posts on here recently inspired by Samoa cookies (shout out to u/bonappeteach). I knew I couldn't have cookies around so I decided to make a little pie or tart for valentine's day!
- Makes 2 to 4 servings. **I'd double if you wanted to use a regular pie dish.
- Crust
- 44 g Almond Flour
- 1 teaspoon Allulose
- 1 tablespoon Butter
- 1 teaspoon Egg White
- small splash of vanilla
- Caramel
- From gnom-gnom.com
- 2 tablespoons butter
- 40 grams Allulose
- 4 oz heavy whipping cream
- Melt the butter until brown and toasty, add the allulose and combine, then add the cream. Allow to bubble and cook on medium low until thickened.
- Coconut
- toast 1 oz of shredded, unsweetened coconut. I did this in a nonstick pan watching it closely.
- Filling and topping
- 1 tablespoon chocolate chips for inside the pie
- 10 grams of chocolate for drizzling on the top
- When you take the crust out of the oven, sprinkle the chocolate chips over the crust, then pour in the caramel sauce and top with the coconut. Bake together for another 10 minutes. Allow to cool and then refrigerate for at least an hour. Once cool, melt 10 grams of chocolate and drizzle over the top.
Steps
- Mix the first three ingredients - I just used my hands to pinch and combine. Then add wet ingredients to form a dough. Pat this into a greased dish. Bake at 350 for about 10 minutes.
