Buttermilk Fried Chicken & Waffles (yeasted) with Sweet & Spicy Syrup
Alternative method for yeasted waffles. Contains cornmeal and baking soda to give a "heavier" waffle, resulting in a spongier texture that has a soft/crisp exterior.
Ingredients
  • subheading: For Yeasted Waffles:
  • ½ cup warm water
  • 2 ½ tsp quick-rise dry yeast (1 packet)*
  • 2 tbsp brown sugar
  • ¼ cup melted unsalted butter
  • 1 tsp vanilla
  • 1 tsp Kosher salt
  • 2 cups buttermilk
  • 1 ½ cups AP flour, preferably White Lily*
  • ½ cup cornmeal
  • 2 large eggs
  • ¼ tsp baking powder
  • Additional melted butter or non-stick cooking spray, for the waffle iron
  • subheading: For Peach Glaze:
  • ½ cup real maple syrup
  • ½ cup honey
  • 1 cup peach preserves
  • Juice of 1 lemon
  • ½ tsp finely chopped fresh thyme (leaves from a few sprigs)
  • ½ tsp crushed red pepper flakes, more to taste
  • ¼ tsp cracked black pepper
  • ¼ tsp Kosher salt
  • 2 tbsp unsalted butter

  • 8 pieces of fried chicken
