Roasted Parmesan Garlic Carrots
Ingredients
  • 1 ½ tbsp evoo
  • 1 tsp garlic salt
  • 2 pounds whole carrots, peeled and cut into ½ inch diameter, so they'll cook evenly.
  • ½ C grated parm cheese, plus additional to taste
  • black pepper
Steps
  1. Preheat oven to 375°.  Line a baking sheet with aluminum foil.
  2. Stir together oil and garlic salt in a small bowl, then pour into a large zip top plastic bag.  Add carrots, seal bag and shake to coat completely.  Arrange carrots on prepared baking sheet.
  3. Roast carrots until just tender, about 45 mins.  Sprinkle with parm and continue roasting until cheese lightly browned, 5 to 10 mins.  Sprinkle pepper and additional parm over top.
