Traditional Irish Colcannon
Ingredients
  • 1 dash kosher salt, more to taste
  • 2 large russet potatoes, about 22 ounces, peeled and quartered
  • 4 ounces curly kale, or spring cabbage. about ½ bunch, stemmed and coarsely chopped
  • ½ cup coarsely chopped spring onions, plus ¼ cup finely chopped spring onions
  • 4 ounces (8 tablespoons) unsalted butter, more for serving, if desired
  • Freshly ground black pepper. to taste
