  • 6-8 oz canned or bottled whole pimientos
  • herb sprigs, to garnish

  • 7 oz tuna - drained well
  • 5 TB mayonnaise
  • 2 tsp lemon juice
  • 2 TB flatleaf parsley, chopped

  • 1.5 oz pitted black olives, chopped (about 8 to 10)
  • 7 oz softened goat cheese
  • 2 garlic cloves, crushed
  • salt & pepper to taste
