Chicken Salad with Apples and Cranberries - Tuna Salad
Similar to what Gracie makes
Ingredients
  • 2½ cups chopped cooked chicken (rotisserie chicken is recommended) canned/ freshly cooked OR 1 can tuna (solid white packed in water)
  • 3 stalks celery, chopped
  • 1 cup chopped apple (about 1 large; I used a Pink Lady and kept the peel because it was organic)
  • ¼ cup dried cranberries or Craisins
  • ½ cup nonfat plain Greek yogurt (optional)
  • 2 tablespoons Hellman’s light mayonnaise
  • 2 teaspoons lemon juice (optional)
  • 2 tablespoons chopped parsley (optional)
  • Pecans, walnuts or almonds (optional, but are delicious)
  • Salt and pepper to taste
  • Avocado (optional)
  • 1 egg, hard boiled
  • Dill weed (optional)
  • Bacon (optional)
  • Bread/roll/bun/pita/wrap
