Ingredients
- 2 Tbsp plus 1 tsp oil
- 8 oz mushrooms
- 1 pkg steamable green beans
- 1 to 1 ½ lbs chicken tenders
- 1 C sliced grape or cherry tomatoes
- ½ tsp minced garlic
- subheading: Dressing:
- ¼ C Olive Garden Dressing
- 1 Tbsp honey
- 2 Tbsp Balsamic Vinegrette*
- 1 tsp Dried Oregano
- ½ tsp salt
- Pepper to taste
Steps
- Wash and dry mushrooms. Sauté the mushrooms in 1 tsp oil until lightly brown. Remove from pan.
- Steam the green beans 4 minutes then drain, cool, and cut in half. Sauté the green beans in 1 Tbsp oil with the garlic for 1 to 2 minutes. Remove from pan.
- Heat 1 Tbsp oil over medium high heat. Add lightly salted chicken and cook 3 to 4 min on each side. Remove from pan.
- Add dressing ingredients to pan. Heat and stir until bubbling. Add the vegetables and toss to coat well.
- Add the chicken and stir 1 minute. Add the tomatoes and stir for 1 minute.
