Nona’s Italian Chicken and Veggies

Ingredients
  • 2 Tbsp plus 1 tsp oil
  • 8 oz mushrooms
  • 1 pkg steamable green beans
  • 1 to 1 ½ lbs chicken tenders
  • 1 C sliced grape or cherry tomatoes
  • ½ tsp minced garlic
  •  
  • subheading: Dressing:
  • ¼ C Olive Garden Dressing
  • 1 Tbsp honey
  • 2 Tbsp Balsamic Vinegrette*
  • 1 tsp Dried Oregano
  • ½ tsp salt
  • Pepper to taste
Steps
  1. Wash and dry mushrooms. Sauté the mushrooms in 1 tsp oil until lightly brown. Remove from pan.
  2. Steam the green beans 4 minutes then drain, cool, and cut in half. Sauté the green beans in 1 Tbsp oil with the garlic for 1 to 2 minutes. Remove from pan.
  3. Heat 1 Tbsp oil over medium high heat. Add lightly salted chicken and cook 3 to 4 min on each side. Remove from pan.
  4. Add dressing ingredients to pan. Heat and stir until bubbling. Add the vegetables and toss to coat well.
  5. Add the chicken and stir 1 minute. Add the tomatoes and stir for 1 minute.
