Chicken Chili with Extra Lime
Ingredients
  • 3 tablespoons vegetable oil or canola oil
  • 2 pounds boneless skinless chicken thighs, cut into bite-size pieces
  • 1 chopped onion
  • 1 jalapeno pepper, seeded and finely chopped
  • 3 cloves garlic, minced
  • 1 ½ teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 (15- ounce) cans white beans, such as Great Northern or cannellini, rinsed and drained, divided
  • 2 cups chicken broth, preferably reduced-sodium, divided
  • 1 ( 4- ounce) can diced green chiles
  • 1 cup frozen whole kernel corn
  • 3 limes
  • Toppers, such as sour cream, chopped fresh cilantro, pickled red onion, sliced jalapeños, shredded cheddar cheese and/or corn chips
