Eggplant Fries
Ingredients
  • 1 eggplant, peeled
  • Egg, beaten
  • Pork Panko, seasoned as desired
Steps
  1. Preheat oven to 425
  2. Cut eggplant into strips
  3. Toss eggplant in beaten egg
  4. Dip in panko mix
  5. Lay on a lined pan and spray with olive oil.
  6. Bake for 18 to 20 - flipping every 5 minutes until golden and crunchy
