Split Pea and Barley Soup
Ingredients
  • ½ cup chopped celery
  • 2 cups chopped carrots
  • 3 cups diced potatoes
  • 1 ½ cup half-moon sliced onions
  • 3 large cloves garlic, minced
  • 1 teaspoon avocado oil (optional)
  • ¾ cup dried split peas, rinsed and drained
  • ¼ cup pearled barley
  • i cup sliced baby bella mushrooms
  • 1 bay leaf
  • ½ teaspoon dried fennel seed, crumbled with your fingers
  • ¼ teaspoon dried anise seed, crumbled with your fingers
  • 1 teaspoon ground ginger
  • 1 teaspoon dried dill
  • 1 tablespoon tomato powder
  • 4 cups water
  • 1 teaspoon sea salt (more or less to taste)
  • ½ teaspoon ground black pepper
