Vegetarian Rice & Bean Casserole
Ingredients
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive or canola oil
  • 2 cups cooked brown rice (instant, long grain or short grain)
  • 1 can pinto beans, drained
  • 1 can black beans, drained
  • 1 can whole kernel corn*, drained
  • 2 tablespoons tomato paste
  • 1 cup vegetable stock
  • ½ teaspoon ground pepper
  • 1 teaspoon Kosher salt
  • 1 teaspoon dried oregano
  • 1 tablespoon cumin
  • 1 cup Pepper Jack or sharp cheddar cheese, recommend Cabot
  • 1 green onion, diced (optional)
