Easy Slow Cooker Pot Roast
Ingredients
  • 1 (3-pound) boneless beef chuck roast
  • 1 teaspoon kosher salt, plus more as needed
  • ½ teaspoon freshly ground black pepper, plus more as needed
  • 1 pound large carrots (about 5), peeled and cut crosswise into 3-inch pieces
  • 1 pound fingerling or small yellow potatoes
  • ¾ cup hot water
  • 1 (37.5-gram) packet Savory Choice demi glace concentrate (see Recipe Notes for substitutes)
  • 2 tablespoons unsalted butter
  • 2 tablespoons plus 1 ½ teaspoons all-purpose flour
  • 2 tablespoons coarsely chopped fresh parsley leaves or chives (optional)
