Twisted Spinach Bread
Ingredients
  • Spinach Filling see the notes for ways to use excess filling

  • 2 Tbsp of olive oil
  • 1 small onion, chopped
  • 3 cloves of garlic, minced
  • ¼ tsp salt (½ tsp if you don't use the meat)
  • ¼ tsp black pepper
  • 1 bag of frozen spinach, 16 ounces
  • 1 cup cheese, a mix of shredded mozzarella and pecorino romano/parmesan
  • 1 egg
  • red pepper flakes to taste
  • optional chopped cured meats such as pepperoni
  • subheading: Marinara for dipping makes extra to freeze.:
  • 2 to 3 Tbsp olive oil
  • 3 to 4 cloves of garlic, minced
  • 1 tsp oregano, dried or fresh
  • 1 tsp basil, dried or fresh
  • ½ to 1 tsp salt
  • 1 28-ounce can of whole plum tomatoes
  • optional red pepper flakes
  • subheading: Dough:
  • 235 grams khorasan high extraction flour (1 ¾ cups 1 Tbsp)
  • 65 grams bread flour (½ cup)
  • 200 grams water (¾ cups 1 ½ Tbsp)
  • 50 grams sourdough starter (scant ¼ cup)
  • 6g salt (1 tsp)
  • egg or milk to brush on the dough before baking
  • optional sesame or nigella seeds to sprinkle on the center of the bread
  • subheading: Baker's Percentages:
  • 100% flour
  • 66% water
  • 17% sourdough starter
  • 2% salt
