Abruzzo-Style Lamb Ragu Pasta
Ingredients
  • 250g dried bucatini pasta
  • 1 tbsp olive oil
  • 500g lamb mince
  • 1 red capsicum, deseeded, cut into strips
  • 1 brown onion, cut into wedges
  • 2 garlic cloves, crushed
  • 2 dried bay leaves
  • ½ tsp dried chilli flakes (optional)
  • 80ml (⅓ cup) red wine
  • 400g can diced tomato
  • 40g (½ cup) finely grated or shredded parmesan, plus extra to serve
  • Fresh basil leaves, to serve
