Add mild Italian sausage for more protein. Add 2tbsp Worcestershire sauce, 1 tsp smoked paprika and 1/2 tsp chipotle Chile powder. Serve with a dollop of sour cream.
Ingredients
  • 1 tablespoon olive oil
  • 1 medium yellow onion small dice
  • 3 medium carrots small dice
  • 3 ribs celery small dice
  • 3 cloves garlic minced
  • 1 teaspoon oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Pinch of cayenne (optional)
  • 2 tablespoons tomato paste
  • 6 cups vegetable broth (preferably low sodium)
  • 1 (14-ounce) can diced fire roasted tomatoes or regular diced tomatoes
  • 1 cup dried red lentils rinsed
  • 1 small green cabbage shredded
  • ½ lemon zest and juice plus more as needed
  • Salt and freshly ground black pepper to taste
  • ⅓ cup chopped parsley for garnish
