Salmon Buddha Bowl with Zesty Herb Dressing
Ingredients
  • 4 Coles Australian Salmon Skin-On Fillets
  • 2 tbs olive oil
  • 1 cup (200g) wholemeal couscous
  • 2 tsp finely grated lemon rind
  • 100g baby rocket leaves
  • ½ red cabbage, finely shredded
  • 1 bunch asparagus, woody ends trimmed, peeled into ribbons
  • 1 ½ tbs pepitas (pumpkin seeds)
  • 1 ½ tbs sunflower seeds
  • 1 tbs pine nuts, toasted
  • subheading: ZESTY HERB DRESSING:
  • ¼ cup chopped flat-leaf parsley
  • 2 tbs chopped dill
  • 1 small garlic clove, peeled, halved
  • 2 tbs Greek-style yoghurt
  • 2 tbs whole-egg mayonnaise
  • 1 tbs lemon juice
