Mom's Spaghetti Sauce (To Be Veganized)
Ingredients
  • 2 lbs ground beef
  • 1 large (32 oz) can tomato sauce (Hunts)
  • 2 tiny cans tomato paste  (or one larger can) (Hunts)
  • 2 large sweet onions (chop big)
  • 3 large bell peppers  (chop big)
  • 2 cups celery (chop big)
  • 1 large can mushrooms or fresh - whichever you like best
  • 2 tbsp Chili Powder
  • 2 tbsp kosher salt
  • 1 tbsp ground black pepper
  • 2 tbsp garlic powder
  • ½ cup sugar (don't give me any crap about this)
  • I make this in a crockpot so it doesn't scorch on the bottom. Start the crockpot on High with a lid before you do anything else, preheat it.  Use a big crockpot.  A smaller one will work but cut the recipe in half.  If you don't have one a dutch oven on the stove will work but keep your eye on it and stir it to keep it from sticking.
  • In a skillet, brown hamburger, put in heated crockpot.  In the oil from the hamburger, saute the vegetables including the mushrooms.  When the onions are clear add vegetables to the crockpot.  Add the tomato stuff, making sure the paste is stirred in completely with no lumps anywhere.  After the tomato stuff is in, then add everything else.  Here is where you decide if you need water or not - if it seems too thick to you, add water until the consistency is how you like it.  Stir in the spices and sugar.  If you're crockpotting, walk away, just stir it once every hour or so.  It takes about four hours to get it just right on high, 8 on low. If you're dutch-ovening, cook this on the lowest heat you can get for about 4 hours, make sure you stir it frequently if on the stove.  Can't say that enough, it will scorch if you don't.  I serve this on angel hair pasta, or hell anything.  It also makes absolutely
