Lattice Pastry
Ingredients
  • 2 pie coasts at room temp, or homemade crusts rolled out.
  • ½c grated almonds
  • 1 egg white
  • Vanilla cream pudding, or homemade!
  • ¼c apricot preserves, or choice
  • 4 c assorted fruit
  • Whipped cream
Steps
  1. On floured pizza stone lay out 1 pie crust and brush with water and sprinkle with almonds.    Lay second over that and roll out slightly then fold up edge to create a border.  Brush edge of crust with whipped egg white.  Grate more almonds over crust.  Bake 20 to 25 minutes. Cool.  Spread with vanilla cream.  Microwave preserves to runny and pour over 4c fruit.  Layer over cream.  Pipe whipped cream over all.  Chill and serve.
