Ingredients
  • 6 cups cooked chicken
  • 8 oz. sour cream
  • 1 cup cream of chicken soup
  •  
  • subheading: Topping:
  • 1½ cups slightly crushed ritz crackers
  • ¼ cup butter, melted
  • ½ tbsp. poppy seeds
Steps
  1. Preheat oven to 350⁰F.
  2. To cook chicken: Place chicken breasts into a large pot; cover with water and bring to a boil over high heat. Reduce heat to medium, cover, and simmer until chicken is no longer pink in the center, about 20 minutes. Drain; shred chicken with two forks.
  3. Coarsely cut chicken and spread over the bottom of a 9x13" baking dish.
  4. Mix together the sour cream and cream of chicken soup. Spread over the chicken.
  5. Mix together topping ingredients and spread over top of casserole.
  6. Bake until heated through and bubbly.
  7. Serve over rice or noodles.
Notes
  • Cream of mushroom soup can be used instead of cream of chicken.
  • Measurements can be adjusted based on how much topping or sauce you want.
