Microwave Fried Shallots

Ingredients
  • 1.5 pounds of shallots ( ½ a Costco package)
  • 8 ounces ( weight ) of oil
Steps
  1. Peel and slice the shallots. (⅛ inch thick)
  2. Put them into a large microwaveable dish.
  3. Pour oil over them and stir it well, coating the shallots in oil.
  4. Microwave on high for 5 minutes and stir.
  5. It takes about 20 minutes, stirring every 5 minutes.
  6. Decrease the interval as they begin to brown.
  7. 2 minutes, 1minute and then 30 seconds.
  8. Drain the shallots BUT DO NOT PRESS ON THEM.
  9. Spread them out on several layers of paper towels on a cookie sheet and
  10. heavily salt them while they are still warm.
  11. Remove the oily papers periodically spilling them onto the layer below.
  12. I like to finish them on the paper towels in a warm oven (175ºf) until the paper towels are much less greasy.
  13. They will crisp up as they cool.
Notes
  • Put the shallot oil (200 ml) in a mason jar to keep in the fridge.
  • Use it in salad dressing or use it for the next batch of shallots.
