Curried Coconut Pumpkin Soup

Ingredients
  • 1 1⁄2 cups quinoa, rinsed & drained
  • 4 carrots, chopped (≈2 cups)
  • 1 yellow onion, chopped (≈1 cup)
  • 6 cloves garlic, minced (≈2 tablespoons)
  • 6 cups unsweetened coconut milk
  • 1 (15-oz) can low-sodium diced tomatoes with their juices (≈1 1⁄2 cups)
  • 1⁄2 (15-oz) can pure pumpkin purée (≈1 cup)
  • 2 tablespoons red curry paste
  • 10 oz baby bok choy, thinly sliced (≈4 cups)
  • 6 oz sugar snap peas, trimmed & cut into bite-size pieces (≈2 cups)
  • 1⁄2 cup fresh cilantro, chopped (divided)
  • sea salt
  • freshly ground black pepper

  • 1⁄4 cup roasted unsalted cashews (optional) chopped
