Ingredients
  • 1 pound ground beef, browned
  • Taco Seasoning mix hot or mild (optional)
  • 1 can Rotel, mild or hot
  • 1 small can (8.75 oz) corn
  • 1 32 oz package of frozen Tater Tots, (or hash browns) thawed
  • 1 can Cream of Mushroom Soup
  • 1 small onion
  • 2 cups Sharp Cheddar or Colby Jack cheese, shredded
  • salt and pepper to taste
Steps
  1. Brown beef and add in chopped onion, soup, corn, Rotel, salt and pepper. Mild or hot Taco Seasoning may also be added to the beef mixture if an extra flavor kick is desired.
  2. Place thawed Tater Tots in the bottom of a greased crock pot. Smash the Tater Tots into the shape of a pie shell with a bottom and sides.
  3. Pour beef mixture into the potato shell.
  4. Cook on low setting for 2 to 3 hours.
  5. 30 minutes before you are going to serve the Tater Tot Casserole, top with shredded cheese.
